Wie es dazu kam, dass ein Grill das Fliegen lernte, zeigt die Geschichte zweier findiger Jungunternehmer aus der Ostschweiz, die sich nicht nur in Zeiten von Corona mit regionaler Verankerung auseinandersetzen.

Als sich die Wege der beiden Ostschweizer Jungunternehmer Andreas Nöckl, Gründer der St. Galler Grillmanufaktur azado sowie Gallus Knechtle, Inhaber des Gastronomieunternehmen Pfefferbeere bei einem gemeinsamen Bekannten das erste Mal gekreuzt haben, ist der Funke sofort übergesprungen. Denn Leidenschaft gepaart mit Spitzenqualität und lokaler Verankerung sind Werte, für die beide Unternehmer brennen. Beide interpretieren in ihrem Bereich altbewährte Traditionen neu. Bei Knechtle sind es lokale Zutaten und Gerichte, die in Vergessenheit geraten sind und nun wieder neu interpretiert werden. Bei Nöckl ist es die jahrhundertealte argentinische Grilltradition, die mit Neuheiten unserer westlichen Kultur und Schweizer Qualität verbunden wird. Eines schönen Dienstagmittags, kurz nach ihrem ersten Aufeinandertreffen, haben sich die beiden Kreativköpfe spontan am ersten azado Grillmodell kulinarisch ausgetobt. Die Lust auf ein gemeinsames Projekt war geweckt. Bis sich schliesslich die richtige Situation ergeben hat, folgten noch einige fruchtbare Austausche. Andreas Nöckl hat seine ausgeklügelten Grills weiterentwickelt und perfektioniert. Auch die pfiffige Eventagentur von Gallus Knechtle hat sich schnell entwickelt und ist in der Zwischenzeit auch in die lokale Gastronomie eingetaucht. Unter anderem mit der Übernahme des Berggasthauses Aescher. Der umtriebige (Aescher-) Wirt Knechtle wollte seine Gäste diesen Sommer einmal mehr mit etwas Speziellem überraschen. Und da Grillen zum Sommer gehört, wie der Deckel zum Topf, war sie endlich da. Die Gelegenheit für eine Zusammenarbeit. Die zahlreichen Gäste sollten am «schönsten Ort der Welt» mit leckeren Grillspezialitäten aus der Region verwöhnt werden. Dafür musste ein langlebiger und robuster Grill her, der nicht nur dem hektischen Gastronomiebetrieb, sondern auch den Witterungen am Berg standhielt. Und da nicht nur bei den Lebens-mitteln regionale Unternehmen berücksichtigt werden, war der Gang zur St. Galler Manufaktur azado naheliegend.
Der Grill hebt ab
Doch wie gelangt ein 113 Kilogramm schwerer Grill zum Gasthaus an der berühmten Steilwand? Die Lösung liess nicht lange auf sich warten. Durstigen Wanderern sei Dank. Getränkenachschub wurde verlangt, ein Helikoptertransport stand an. Und so lernte der azado Grill fliegen. Andreas Nöckl war vor dem Start in Wasserauen sichtlich nervös: «Wir sind etwas angespannt. Wir haben schon auf verschiedenste Arten ausgeliefert, aber der Helitransport ist nun auch für uns eine Premiere. Der Grill hat viele schwere und bewegliche Teile und darf nicht zu stark schwanken.» Doch die etwas spezielle Ladung wurde von den Helikopterprofis kompetent gesichert. Es konnte losgehen. «Ein eindrückliches Bild, wenn sich der Grill majestätisch in die Lüfte erhebt und in die Bergwelt entschwindet.» meint Grillchef Nöckl. Nur fünf Minuten später konnte Gallus Knechtle den Grill auf dem kleinen Platz vor seinem Gasthaus vorfreudig entgegennehmen. Erleichtert, dass alles reibungslos über die Bühne ging. Vor seinem inneren Auge wohl bereits saftige Appenzeller Beef Steaks, die schon bald auf dem Grill brutzeln würden. Immer am Donnerstagabend sollen seine hungrigen Gäste künftig mit regionalen Leckereien vom Grill bewirtet werden. Wann immer es das Wetter zulassen wird. Ein einprägsames Rattern im Ohr, wenn der Grilleur den vollen Rost in Richtung glühender Kohlen runterkurbelt und der verlockende Grillduft der langsam in die Nase steigt…
